zucchini pasta

I have had my spiralizer for a few months now, and have been waiting to put it to use! After seeing one of my friends post a picture of their zucchini dish, I knew it was time for me to create my own vegetable pasta.

This Zucchini Pasta dish is such a healthy and tasty way to enjoy your veggies! It is so incredibly easy to make, and was very much enjoyed by both my husband and me. It would make a great light meal on its own, but would make any meal better as a side dish as well.

I can not wait to make this recipe all the time during the summer when the veggies are fresh and more accessible! We are excited to hit up the farm stands again come May, better yet, I think we are going to be planting our own garden this year!!

Ingredients:
4 zucchini
4 plum tomatoes, diced
3 tbsp pesto
2 tbsp extra virgin olive oil
salt and pepper, to taste

Directions:
1. Put the zucchini through the spiralizer.
2. In a large sauce pan, sauté the zucchini in olive oil for 2-3 minutes, then add the tomatoes and sauté for another 2-3 minutes, or until the zucchini is tender.
3. Stir in the pesto to coat, and salt and pepper, to taste.
4. Serve, and enjoy!
