Roasted veggies have been our thing recently. Maybe we’re just really late to obvious technique everyone else does, but whatever the case, we’re digging it.

Particularly, Trader Joes Organic Carrots of Many Colors. We eat these weekly + are completely okay with it. Who knew carrots could be so excitingly tasty?

This week’s menu is nothing earth shattering because I had to do my meal planning on the go and didn’t have quite as much time as I would have liked.
