Holy moly, it has been a long time since I have posted a Weekly Meal Plan. My apologies!
I will have you know that we have been planning out all of our weekly meals as usual and we have continued to shop according to a 5 meals-a-week plan. I just haven’t been blogging it. Which is unfortunate, because we have been making some really, REALLY good meals.
Even though you didn’t see evidence of it here, we’ve been making some amazing new recipes. My husband whipped up an excellent Chicken Sausage Gumbo and a homemade Beef Ramen bowl, and I have been experimenting with Gluten-Free cooking and baking (cupcakes!!!).
It’s time I start sharing all of this goodness with you again.
Also, about a month ago, I guest posted for my friend over at Honey Bee Boutique with these delicious Quick and Easy Chicken Caprese Meatballs. (PS–> you should buy some of her “mom life” tees!)
We have also been enjoying lots and lots of soup. From tomato soup, to butternut squash soup to chicken pot pie soup, to french onion soup. Safe to say that this has been the winter of soups. 🙂 And now that things are warming up, hopefully it will turn into a spring of grilling…
I promise you that I will get back to my blogging game, I feel really badly about my lack of recipe posting. I am sure you understand that I have been soaking in EVERY SINGLE SECOND with my little baby girl.
Now that we have a bit more sunlight to work with I can assure you that I will step up my game, even just a little bit. How is one new recipe a week? That is my new goal. Goals are good to set, and I am really going to try hard to achieve this one.
Anyways….long story short, below is what we’ve got cooking for this week:

Monday- sweet potato BBQ wrap
Tuesday- spaghetti squash carbonara
Wednesday- bacon cheese burgers and salad
Thursday- grilled buffalo steak (thanks dad!) and asparagus
Friday- grilled chicken + veggies with quinoa
This Week’s Groceries:
- ground beef
- spaghetti squash
- red quinoa
- cheddar cheese
- hamburger buns
