Ever have a morning where you just could not make up your mind about what to have for breakfast?

Me too…

So, instead of picking one of my favorites, I decided to combine them all! Here we have what I like to call a Waffle Breakfast Sandwich. Sounds healthy, right?

Eh, not so much…but it was DELICIOUS!

This glorious concoction┬áhas all the makings for the perfect breakfast sandwich…whole wheat waffles, eggs, melty cheese, bacon, and of course, syrup!

You can eat this like a real sandwich, or pour syrup over the entire thing (like we did) and use a fork and knife.

If you’re looking to make your own waffle batter, which I would highly recommend, just follow these simple instructions for fluffy, golden waffles that melt in your mouth:

Ingredients:
2 cups whole wheat flour
2 tbsp organic cane sugar
4 tsp baking powder
1/4 tsp salt
1 1/2 cups skim milk
2 eggs
1/3 cup unsalted butter, melted
1 tsp vanilla extract

Directions:
1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
3. Slowly mix the wet ingredients into the dry and combine well.
4. Now you have your waffle batter! ­čÖé Pour onto a greased waffle maker.

Anyways…I should probably get you the recipe we’re all waiting for!

Ingredients:
whole wheat waffles
eggs, scrambled with a dash of milk
handful of shredded cheddar cheese
bacon
syrup

Directions:
The only real complication with a sandwich like this is getting the timing right! We started our bacon first, and then made our waffle batter and whisked our eggs. Then we heated up our waffle iron and got the eggs cooking slowly. We poured our waffle batter into the iron, removed the bacon to dab dry, and finished up our eggs.

No worries if something is done before the rest, it will still be delicious! Enjoy!
