As sweet potatoes slowly become their own piece of my personal food pyramid, I am happily integrating them into breakfast. Now I can have them three times a day!
I’m not sure what made us think about trying a Sweet Potato Hash, complete with onions, peppers, arugula, and eggs over easy – but it happened and I’m so okay with it.
Nothing makes me happier than seeing beautiful, silky yolk run out of a perfect egg. If done well, it elevates all of the ingredients in this hash and binds everything together.
The other wonderful benefit is that this whole meal only needs to dirty one piece of cookware, hence the name. This makes a delicious, healthy breakfast option like this more realistic if you need to get your butt out the door and in the car each morning before 7am. You won’t have to think about the huge mess you left at home while at work all day, cause you’ve only got one pan to clean.
That yolk tho…
2 large sweet potatoes, peeled and diced
2 Tbsp butter
1 Tbsp olive oil
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/8 tsp turmeric
1/4 cup white onion, diced
1/4 cup red pepper, diced
2 cups of arugula
salt and pepper, to taste
1. In a large pan, melt the butter and drizzle in the olive oil. Now, add the sweet potatoes and cook on medium heat for about 4-5 minutes. Then, add in your peppers and onions and cook everything together for an additional 7-8 minutes, or until the sweet potatoes are oft and have started crisp up around the edges.
2. Toss in the arugula and then crack the eggs on top, carefully as to not break the yolks. Sprinkle in a tsp of water and cover so the steam can help cook your eggs.
3. Season with salt and pepper, and enjoy!
