One of the things I love about these Keto Fat Bombs is the fact that if I am having a craving for dessert or need a quick running-out-of-the-house type of snack, I can grab one out of the freezer and I am instantly satisfied and full.
One of the challenges of the keto diet, we’ve found, is that a lot of food needs to be prepared. It is not very “on the road” easy either. I prep a lot of snacks and meals for a quick lunch grab. Thankfully our lifestyle let’s us be homebodies when we want to be, but the prep time still helps.
When we had a road trip a month or so ago, I baked some almond flour keto muffins, made some fat bombs, baked some cheese bites, and made an assortment of nuts for easy car ride snacking. Not only did it keep us true to our eating guidelines, but it saved us a lot of time and money too. Stopping off the highway doesn’t typically yield many nutritional options.
To be candid, I am always mixing up the amounts of each ingredient based on how much I have that week, and they always turn out just as great.
One thing for sure, is that I ALWAYS use 2 scoops of Vital Proteins Collagen Peptides. That’s non-negotiable. We LOVE collagen in our home, specifically, Vital Proteins. The benefits include improvements to hair, skin, nails, joints and ligaments, and tendon health. We add it to almost everything we eat and drink.
Okay, okay, the recipe already…
1 cup organic peanut butter
1/2 cup organic coconut oil
6 oz cream cheese
2 scoops Vital Proteins Collagen Peptides
1/4 tsp organic cocoa powder (optional)
1. In a stand mixer, mix together all of the listed ingredients.
2. Set the bowl with the mixed ingredients into the freezer for 20-30 minutes.
3. Take out of the freezer, and using a cookie scooper, scoop out balls of the mixture and set into a glass container and then set back in the freezer.
4. Grab one whenever you’re feeling a craving for a dessert or just need to feel full quickly but don’t have any prepared food ready.
*Another option would be melting together a high quality dark chocolate bar with a tbsp of coconut oil and then dipping in the fat bombs completely and then setting them back in the freezer for the chocolate to harden. I usually just do without this step. You could also sprinkle them with some ground cinnamon. The options are endless!
