healthy snack bites

If you’re like us, then you probably are trying to save as much money at the grocery store as you possibly can. For us, that has meant trying to cut out any “snack” buying. I will admit that I am a sucker for the Wegmans brand of whole wheat organic animal crackers – I think they are amazing!  As well as a few other items.

When in doubt, I have been trying to make my own snacks. To save money, and to try to eat healthier.

Last week, I made my own tortilla chips simply by cutting up tortillas, spraying them with olive oil, sprinkling them with salt and pepper, and baking them in the oven.

I also made these awesome healthy snack bites!! I can not sing enough praises of these healthy, tasty, and super easy snack bites.

They are packed full of oats, peanut butter, flax seed, unsweetened shredded coconut, honey, vanilla extract, and of course, just a few chocolate chips. 😉

I have been putting two of them in my lunch box with me for work and eating them when I get hungry. They are the perfect energy bite, and way to quench your hunger while still sparing yourself the carbs.

I guarantee that everyone in your family will like them! My husband and I could have had them all in one sitting! But, we tried to save them so we would have enough for the week!

Ingredients:
1 1/2 cups old fashioned oats
1/2 cup flax seed, ground
1/2 cup unsweetened shredded coconut
1/4 cup mini semi-sweet chocolate chips
1/3 cup unfiltered honey
1/2 honey roasted peanut butter
1/2 tsp vanilla extract

Directions:
1. In a large mixing bowl, stir together all ingredients. (I just used my hands!)
2. Form mixture into small balls. (You could use a cookie scooper)
3. Place in a tupperwear container and store in your fridge.
4. Enjoy!
