These Garlic Lime Chicken Tacos are just that!
Who knew it was so easy to make your very own homemade Cilantro-Lime Rice like the kind they serve at Chipotle?! It is so simply, and probably slightly healthier. 🙂
These tacos are the perfect week-night staple because of how convenient they are, and how easy they are to adjust to your family’s liking!
It is so nice getting the tastes of fresh vegetables…it means spring time is here, which also means summer is around the corner which then means FARMERS MARKETS OPEN! 🙂 Yippie!
3 chicken breasts, diced
5 garlic cloves, minced
1/4 cup extra virgin olive oil
2 fresh limes
salt and pepper, to taste
package of soft tacos
handful of fresh cilantro
1 plum tomato, diced
1/2 white onion, diced
shredded cheddar cheese
hot sauce of your choice, we used one called Good and Evil
1. After rinsing your rice in water, cook according to directions on the box. Squeeze in the juice of 1/2 a lime. Once water is beginning to get absorbed, throw in a handful of fresh cilantro. Continue to cook on simmer. This will be your cilantro-lime rice.
2. Marinate the chicken with the garlic, juice of 1/2 a lime, olive oil, salt and pepper. Rub this marinade into the chicken and set sit in a bowl for about 15-20 minutes. Then cook the chicken either on the stove top or on the grill.
3. Time to assemble! Fill your soft taco with a bit of shredded cheese, rice, chicken, tomatoes, onions, fresh cilantro, fresh lime juice and some of that hot sauce!
