I don’t know if I have told you this about me yet, but I love eggs!
All kinds of eggs…scrambled eggs, omelets, fried, hard boiled… My favorite however, is without a doubt any type of breakfast sandwich.
But this was different and I loved the freshness of it. The homemade salsa that we made to top it off with was superb and very easy to make!
4 small tortillas
1/2 cup milk
sprinkle of shredded cheddar cheese
handful of fresh cilantro, chopped
2 garlic cloves, minced
1 whole fresh tomato, de-seeded and diced
1/4 cup onion, diced
1/4 cup orange pepper, diced
2 tbsp red wine vinegar
1 tbsp olive oil
salt and pepper, to taste
1. In a large bowl, whisk together the eggs and milk. Cook them on low heat until completely scrambled. Now, add some salt and pepper to taste.
2. Toast the tortillas on a griddle for 1-2 minutes on each side, it brings out the flavor of the tortilla and also leaves some nice grill lines!
3. In a mixing bowl, combine the fresh cilantro, garlic, tomato, onion, pepper, vinegar, and oil.
4. Time to assemble! First sprinkle some cheddar cheese on the tortilla, followed by the egg, and then the homemade salsa.
