Chicken Apple Orzo

Orzo….with a simple cheese sauce, all natural chicken apple sausages, and freshly sliced macintosh apple. While it may sound like an odd combination of textures and flavors, it is uniquely wonderful!

While we don’t have any kids running around (yet), I have a pretty strong feeling that this orzo dish would be a child pleaser. It’ the perfect alternative to boring, boxed mac n’ cheese.

10 oz whole wheat organic orzo
chicken apple sausage, chopped
1/2 of a macintosh apple, slivered
1 tbsp unsalted butter
1 cup milk
1 1/2 cup shredded cheddar cheese
salt and pepper, to taste

1. Cook the orzo according to the directions on the box.
2. Cook the sausages on a skillet for about 7-8 minutes in a little butter.
3. In a small sauce pan, melt the butter and then add in the milk and cheese. Whisk until all combined. Add some salt and pepper to your liking. Once the cheese sauce is melted, stir it in with the cooked orzo.
4. Time to combine! Top the orzo with fresh apple slices and the chicken apple sausage.
5. Enjoy!
